Summary

Get your hands doughy in this very hands on tortilla workshop focusing on the classic Sonoran tortilla casera, home style flour tortilla. After learning the techniques for making, shaping and cooking the dough, participants will enjoy quesadillas featuring the classic Sonoran flavors of roasted chileverde (green chiles) and queso fresco, as well as a wild green salad and refreshing naranjada (fresh orange cooler).
Workshop participants will participate in in making corn, flour and wheat tortillas from scratch, from mixing the dough, to shaping and cooking. Attendees should dress comfortably and be prepared to stand for brief periods. Along with learning how to make tortillas, workshop will include information on the history of tortillas in Mexico, such as regional preferences, sizes and uses. Learn for yourself the cornerstone for Mexican cuisine: tortillas!

This offering from BCA's Borderlands Forum programming represents a collaboration with our kind host, Tumacookery of Tubac, AZ.
