Sonoran Flour Tortillas Workshop w/ Minerva Orduno Rincon
Learn the basics if a beloved part of Sonoran cuisine, tortilla de harina, flour tortillas. This hands on workshop will focus on the preparation of the lard based dough, as well as rolling techniques for shaping paper this disks.

Participants will then enjoy their efforts in a satisfying quesadilla of fresco and chili verde tatemado, fire roasted green chilies. Paired with the tortillas will be a refreshing and surprising pinole de trigo, a lightly sweetened toasted wheat beverage. This workshop will utilize locally grown white Sonoran wheat, a heritage grain vitally important in the development and growth of this desert region. This class will take place in an inspected commercial kitchen. Please be sure to wear comfortable closed toe shoes, and keep hair gathered. Participants are encouraged to bring their own container for anything they wish to take home.
